Fall is finally here, and I find myself in the kitchen wanting to create cozy, comforting dishes, embracing all the flavors the season has to offer. This salad TASTES like fall with sweet roasted butternut squash, toasted pecans, fall apples, and of course maple dressing. The farro makes this grain salad both substantial and satiating, perfect for chillier fall weather. This farro salad was instantly a favorite from the first bite. I've since tried different variations swapping different veggies, cheese, dressings, or nuts, and I love each one.

I tossed apple slices with the fresh lemon juice from the dressing to keep them from browning.

What we love about this salad is it is so VERSATILE, making it great throughout the year, simply use what produce is in season. You can easily swap most of the ingredients to your preference or what vegetables are in season at your local farmers market. Sweet potatoes, or Brussel sprouts would be great alternatives to butternut squash. You could substitute parmesan, feta, or blue cheese for the goat cheese. Or try replacing the pecans for almonds, walnuts, or pine nuts.

Definitely hearty enough to serve alone or it makes an impressive side dish alongside an entree.
