Everyone has a reliable one-pot dish they turn to on a busy weeknight, which the entire family enjoys (even those picky eaters) and offers a great return on investment. The minimal effort put into this one-pot marvel yields an exceptional flavor payoff, requiring less than 10 minutes of prep (yes, that's the extent of my financial expertise).
It's uncomplicated, comes together faster than take-out, and utilizes ingredients I typically have on hand in our kitchen. This one-pot recipe is my favorite, and I'm confident it will soon become yours as well.
One-Pot Chicken and Artichoke Cavatappi recipe from Skinnytaste is my go-to dish. The whole family loves this dish and it shows up in my weekly menu rotation-a lot. It's a favorite for a few reasons: who doesn't love a one-pot wonder, because you don't want to spend the evening cleaning the kitchen; it uses real, whole ingredients including veggies; and it tastes absolutely amazing. What's more, you can easily adjust this recipe to suit your specific dietary needs. For example, I like to throw in a handful of pine nuts or pistachios, swap the pasta for gluten-free pasta when I'm watching my carb intake, or add a can of white or garbanzo beans or extra chicken for more protein.
If I'm in a hurry, I admit to skipping this step of browning the artichoke hearts. The dish is still delicious without this step.
